Hello there,\u00a0I’m back again.\u00a0 I\u00a0hope you all had a wonderful Christmas and are looking forward to New Year.<\/p>\n

I’m going to\u00a0keep\u00a0my promise today and\u00a0share\u00a0my\u00a0recipe for mulled fruit trifle.\u00a0 It’s simply delicious, if I do say so myself!\u00a0 This trifle makes a lovely dessert for Christmas or New Year dinner.\u00a0 We had it\u00a0on Christmas Day.\u00a0 It is fast becoming a favourite in the linen cloud house.<\/p>\n

So, on with the recipe.<\/p>\n

Mulled Fruit Trifle<\/p>\n

Ingredients: 150ml ruby port, 75g caster sugar, 1tsp mixed spice, 500g frozen fruits of the forest, 200g madeira cake, 300ml cream, 500ml quality custard<\/p>\n

Method:\u00a0 Add the ruby port, mixed spice and caster sugar to a saucepan and bring to the boil.\u00a0Once boiling, reduce to a simmer for 5-10 minutes and stir now and again until the liquid becomes syrupy.\u00a0 Add the frozen fruits, stir and leave to one side until cool.<\/p>\n

Break the madeira cake into chunks and put in the bottom of\u00a0a glass serving bowl. Cover the cake with the forest fruit mixture and mix gently.\u00a0 This ensures all the cake is coated with the syrupy mixture.\u00a0 Add a layer of good quality\u00a0custard, or if you have time and the inclination, feel free to make your own.<\/p>\n

Whip the cream and add as the final layer.\u00a0 You can be as flamboyant or reserved as you want with the final decoration.\u00a0 For this one, I attempted piping the cream to make pretty peaks.\u00a0 As you can see in the picture below, it was only slightly successful!\u00a0 But you can decorate the trifle to suit the occasion.\u00a0 Some dark chocolate curls always look pretty added on top.<\/p>\n

note:\u00a0 a mix of raspberries and strawberries would work just as well as forest fruits<\/p>\n
